How do we make it long-life?

We make Yazoo long-life by high temperature heat treatment - that is heating the milk to a very high temperature (about 130ºc) for about 15 seconds to kill the bacteria that naturally exist in raw milk.

The milk is then packaged into specially sterilised bottles to ensure that the milk remains safe to drink for at least 3 months. Yazoo does not contain any preservatives.

The bottle is filled in a protected atmosphere, which means that the air is filtered and free of bacteria and the bottles are sealed in a sterile machine so that no outside air can get into them.

If the bacteria were not killed off then the milk would turn sour in very little time (i.e. within 3 days).

Once the bottle is opened and lets the air in, it becomes just like normal fresh milk and needs to be kept in the fridge and drunk within a few days.
